Spinage and Artichoke Steak Roll-Ups

For a romantic dinner, treat your sweetheart to Spinach and Artichoke Steak Roll-Ups. They’re simple to make, yet look incredibly elegant!

Ingredients

  • 1 1/2 lbs. London broil steak
  • 1 (15.5 oz.) can artichoke hearts, drained and chopped
  • 2 cups spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1/2 cup shredded white Cheddar cheese
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper

Instructions

  1. Preheat oven to 350°.
  2. Butterfly steak to create long rectangle.
  3. In a medium bowl, combine artichokes, spinach, garlic, ricotta, Cheddar, salt and pepper. Spread mixture on steak. Tightly roll up steak, then slice into rounds. Cook about 23 to 25 minutes, or until desired doneness.
