Pappardelle with Mushrooms
For dinner this week, make Pappardelle with Mushrooms. A simple, yet flavorful mushroom sauce completes this dish.
Ingredients
- 1 (1 lb.) package pappardelle
- 6 Tbsp. butter
- 1 lb. chopped mixed mushrooms
- 3/4 Tbsp. chopped fresh thyme
- 6 cloves garlic, minced
- 3/4 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 1 cup ricotta cheese, divided
- 1/2 cup chopped walnut, toasted
- 3 Tbsp. honey
Instructions
- Cook pappardelle according package directions. Reserve 1/2 cup pasta water, drain remaining and
- set aside.
- In a large skillet over medium heat, melt butter. Add mushrooms, thyme, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until mushrooms are golden, about 15 minutes.
- Add pasta, reserved water, 1/2 cup ricotta, remaining salt and pepper and walnuts to skillet. Toss to combine. Serve topped with remaining ricotta and drizzle with honey.
