Buffalo Chicken Bell Peppers

Ingredients
- *4 bell peppers, halved and seeds removed
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 3 cups shredded rotisserie chicken
- 1/2 cup hot sauce
- 1 (8 oz.) package cream cheese
- 1/2 cup ranch dressing
- 2 cups shredded Cheddar cheese, divided
- Ranch dressing, for serving
*Or use hot Hungarian peppers for extra spice
Instructions
- Preheat oven to 400°.
- Place bell peppers, cut-side up, on baking sheet lined with foil. Drizzle with oil and season with salt and pepper.
- In a large bowl, combine chicken, hot sauce, cream cheese, ranch dressing and 1 cup Cheddar cheese. Fill peppers evenly with chicken mixture.
- Top each pepper with remaining Cheddar and bake until peppers are crisp-tender, about 20 minutes. Drizzle with ranch and serve.
