Buffalo Chicken Bell Peppers

Looking for a light weeknight dinner? Get creative with Buffalo Chicken Bell Peppers.

Ingredients

  • *4 bell peppers, halved and seeds removed
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 3 cups shredded rotisserie chicken
  • 1/2 cup hot sauce
  • 1 (8 oz.) package cream cheese
  • 1/2 cup ranch dressing
  • 2 cups shredded Cheddar cheese, divided
  • Ranch dressing, for serving

*Or use hot Hungarian peppers for extra spice

Instructions

  1. Preheat oven to 400°.
  2. Place bell peppers, cut-side up, on baking sheet lined with foil. Drizzle with oil and season with salt and pepper.
  3. In a large bowl, combine chicken, hot sauce, cream cheese, ranch dressing and 1 cup Cheddar cheese. Fill peppers evenly with chicken mixture.
  4. Top each pepper with remaining Cheddar and bake until peppers are crisp-tender, about 20 minutes. Drizzle with ranch and serve.
