Shrimp Cakes
This week, we’re putting spins on all sorts of favorite seasonal flavors! For dinner, make Shrimp Cakes paired with a flavorful lemon aioli.
Ingredients
Shrimp Cakes
- 1 lb. raw shrimp, deveined, peeled and minced
- 2 eggs
- 1/2 onion, finely minced
- 1 clove garlic, minced
- 1 Tbsp. mayonnaise
- 3 Tbsp. cornstarch
- 2 Tbsp. chopped green onion
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/8 tsp. cayenne pepper
- 1/2 tsp. Old Bay seasoning
- 3 Tbsp. olive oil
Lemon Aioli
- 3/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 tsp. lemon zest
- 1 Tbsp. lemon juice
Instructions
Shrimp Cakes
- In a large bowl, combine minced shrimp, eggs, onion, garlic, mayonnaise, cornstarch, green onion, salt, pepper, cayenne and Old Bay seasoning.
- Heat oil in a large skillet over medium heat. Shape 2 tablespoons shrimp mixture into a cake and place in pan. Continue with remaining mixture, until pan is full. Cook 2 to 3 minutes, flip, then cook for an additional 2 minutes. Transfer to a plate lined with paper towels. Serve warm with lemon aioli.
Lemon Aioli
- In a small bowl, stir together mayonnaise, garlic, lemon zest and lemon juice. Stir in salt and pepper to taste, then serve.
