Cheese-Stuffed Turkey Meatloaf

Cheese-Stuffed Turkey Meatloaf

For dinner this week, put a lighter twist on classic meatloaf with this recipe for Cheese-Stuffed Turkey Meatloaf.

Ingredients

Glaze Topping

  • 2 Tbsp. ketchup
  • 1 tsp. brown sugar
  • 2 tsp. Dijon mustard
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. hot sauce

 

  • 2 lbs. lean ground turkey
  • 1 shallot, minced
  • 3/4 cup chopped mushrooms
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup ketchup
  • 2 eggs
  • 1/2 tsp. salt
  • 1 1/2 cups shredded Cheddar cheese
  • 1 cup chopped spinach

Instructions

  1. Preheat oven to 350°.
  2. In a small bowl, mix together ketchup, brown sugar, mustard, Worcestershire and hot sauce. Set aside.
  3. In a large bowl, add ground turkey, shallot, mushrooms, breadcrumbs, ketchup, egg and salt. Mix until well combined. Transfer to a 12 x 16-inch piece of parchment paper and spread into a flat rectangle.
  4. Sprinkle cheese and spinach evenly over meatloaf. Roll up jelly roll-style and seal ends. Place seam-side down in a 9 x 13-inch baking dish sprayed with nonstick cooking spray. Bake for 45 minutes.
  5. Remove from oven, brush with glaze mixture and cook for an additional 10 to 15 minutes.
