Cheese-Stuffed Turkey Meatloaf
For dinner this week, put a lighter twist on classic meatloaf with this recipe for Cheese-Stuffed Turkey Meatloaf.
Ingredients
Glaze Topping
- 2 Tbsp. ketchup
- 1 tsp. brown sugar
- 2 tsp. Dijon mustard
- 2 tsp. Worcestershire sauce
- 1/2 tsp. hot sauce
- 2 lbs. lean ground turkey
- 1 shallot, minced
- 3/4 cup chopped mushrooms
- 3/4 cup seasoned breadcrumbs
- 1/4 cup ketchup
- 2 eggs
- 1/2 tsp. salt
- 1 1/2 cups shredded Cheddar cheese
- 1 cup chopped spinach
Instructions
- Preheat oven to 350°.
- In a small bowl, mix together ketchup, brown sugar, mustard, Worcestershire and hot sauce. Set aside.
- In a large bowl, add ground turkey, shallot, mushrooms, breadcrumbs, ketchup, egg and salt. Mix until well combined. Transfer to a 12 x 16-inch piece of parchment paper and spread into a flat rectangle.
- Sprinkle cheese and spinach evenly over meatloaf. Roll up jelly roll-style and seal ends. Place seam-side down in a 9 x 13-inch baking dish sprayed with nonstick cooking spray. Bake for 45 minutes.
- Remove from oven, brush with glaze mixture and cook for an additional 10 to 15 minutes.
