Cod with White Wine Tomato Sauce
Cod with White Wine Tomato Sauce makes a delicious dinner option, filled with bright flavors. Serve over pasta to create a complete meal.
Ingredients
- 4 Tbsp. olive oil, divided
- 4 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup dry white wine
- 1/2 tsp. red pepper flakes
- 1/4 cup chopped basil
- 2 Tbsp. lemon juice
- 1/2 tsp. lemon zest
- 1 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 4 (6 oz.) filets cod
Instructions
- In a large pan over medium heat, add 2 tablespoons olive oil and garlic. Cook about 1 minute, until fragrant. Add tomatoes and cook until blistering, about 10 minutes. Stir in white wine and red pepper flakes and let simmer. Add basil, lemon juice, lemon zest, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 2 minutes. Transfer sauce to a bowl and set aside.
- Heat remaining 2 tablespoons oil in same pan over medium heat. Season both sides of cod with remaining salt and pepper. Add cod to pan and cook about 5 minutes per side. Serve with reserved sauce.
