Taco Casserole
Before the kids head out for trick-or-treating, fill their bellies with a filling taco casserole they will love. You can customize this recipe to their tastes and it’s an easy and quick dish to put together on a busy Halloween night.
To make this hearty dish, you will need 1 pound of lean ground beef, 1/2 of an onion, diced, 2 tablespoons of taco seasoning, one 15 oz. can of corn, drained, one 15 oz. can of black beans, drained and rinsed, 1 cup of salsa, optionally one 4.5 oz. can of green chiles, drained, 1 cup of sour cream, 3 cups of crushed Doritos, and 2 cups of Mexican blend cheese.
For topping off this casserole, you can choose your favorite taco toppings. We like to add sliced green onions, diced tomatoes, shredded lettuce, sliced black olives and sour cream.
Start by preheating your oven to 350º. In a large skillet cook the ground beef and onions. Drain any extra grease. Add the taco seasoning, corn, black beans, salsa and chiles. Remove from heat. Stir in the sour cream and one cup of cheese.
Place two cups of crushed chips into the bottom of a 9×13-inch baking dish sprayed with nonstick cooking spray. Pour meat mixture overtop, Add remaining cheese and chips over top and bake for 10 minutes until cheese is melted.
Top with your favorite taco toppings.

- 3 cups crushed Doritos
- 2 cups Mexican cheese blend
Toppings

- or toppings of choice
