Shrimp Scampi
Whether you’re having a belated Valentine’s Day celebration or looking for a great Lenten recipe, this easy shrimp dish is an ideal recipe.
To make this classic seafood and pasta dish, you’ll need 1 pound of angel hair pasta, cooked according to package directions, 1 pound of raw shrimp, peeled and deveined, 3 Tablespoons of butter, ¼ cup of good extra-virgin olive oil, 5 cloves of minced garlic, ⅛ teaspoon of red pepper flakes, optional, ¼ teaspoon of Italian seasoning, ½ teaspoon of freshly ground black pepper, ¼ cup fresh lemon juice, ½ cup of dry white wine, and ¾ cup of chicken stock or stock of choice.
For the toppings, you will need ¼ cup of Panko breadcrumbs, 1 Tablespoon of butter, ½ cup of grated Parmesan cheese, and ¼ cup of fresh parsley, chopped.
In a small skillet, sauté breadcrumbs in 1 Tablespoon of butter until browned; set aside.
In a 12-inch skillet, sauté garlic in 3 Tablespoons butter and oil for one minute. Add the red pepper flakes, Italian seasoning, black pepper, lemon juice, wine, and chicken stock. Bring to a simmer. Add the shrimp and stir for 2-3 minutes until the shrimp turns pink.
Pour the shrimp and sauce over the cooked pasta and mix. Top with Parmesan cheese, toasted breadcrumbs, and parsley.
