Chicken Taco Pasta Salad
This Chicken Salad recipe is a perfect dish for picnics, family reunions or even just dinner!
What you’ll need
- 2 cups uncooked pasta of choice
- 1-2 cups cooked shredded chicken breast
- 1 envelope taco seasoning
- 1/3 cup taco sauce
- 3 cups shredded iceberg lettuce
- 1/2 cup shredded Cheddar cheese
- 1/2 cup chopped tomatoes
- 1 (2.25 oz.) can sliced olives, drained
- 1/4 cup chopped green onions
- 2 Tbsp. ketchup
- 2 Tbsp. brown sugar
- 2 Tbsp. red wine vinegar
- 1/4 tsp. onion powder
- 1/4 tsp. paprika
- 1/2 tsp. Worcestershire sauce
- 1/4 cup olive oil
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- sour cream for topping
Directions
- Cook the pasta according to package directions. Drain and rinse.
- Stir shredded chicken with taco seasoning and taco sauce in a large bowl. Add pasta, shredded lettuce, cheese, tomatoes, olives and green onion.
- For the dressing, combine ketchup, brown sugar, red wine vinegar, onion powder, paprika, Worcestershire sauce, olive oil, salt and pepper. Pour desired amount over salad and mix. Serve with a dollop of sour cream overtop.
