Hawaiian Meatballs and Rice
Crushed pineapple and sweet barbecue sauce come together in this recipe for Hawaiian Meatballs and Rice. Serve over brown rice for a complete meal!
Ingredients
- 1 (8 oz.) can crushed pineapple
- 1 cup barbecue sauce, divided
- 1 Tbsp. brown sugar
- 1 lb. ground beef
- 1/2 green bell pepper, finely diced
- 1 onion, finely diced
- 1 clove garlic, minced
- 1 large egg, beaten
- 1/2 cup seasoned Panko bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 3 cups prepared brown rice
Instructions
- Preheat oven to 450°.
- In a small pot, combine half the pineapple, 3/4 cup of the barbecue sauce and brown sugar. Mix and set aside. In a large bowl add remaining pineapple and barbecue sauce, beef, green bell pepper, onion, garlic, egg, panko bread crumbs, salt and pepper. Using your hands, mix together until combined. Roll into 1-inch balls and set on baking sheet and bake for 20 minutes.
- Warm the sauce on the stove and toss with meatballs. Serve meatballs over rice.
