Greek Yogurt Banana Muffins
Greek yogurt banana muffins are on the menu this week. This moist, delicious treat is filled with dark chocolate chips, walnuts and mashed bananas.
Ingredients
- 2 1/4 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 4 Tbsp. butter, softened
- 3/4 cup sugar
- 1/4 cup brown sugar
- 3 bananas, mashed
- 1 cup vanilla Greek yogurt
- 2 eggs
- 1 1/2 tsp. vanilla extract
- 1/2 cup dark chocolate chips
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350º.
- Line muffin tins with wrappers. In a medium bowl whisk together flour, baking powder, baking soda and salt. In a large bowl mix together butter, sugar and brown sugar. Add in bananas, yogurt, eggs and vanilla. Add flour mixture to wet ingredients and mix until combined. Fold in chocolate chips and walnuts.
- Pour about 1/4 cup batter into each muffin cup. Bake for 20 to 25 minutes, until tops are golden brown. Allow to cool before removing from tins.
