Salmon and Lime Rice
Need a quick dinner for tonight? Salmon and Lime Rice will be done in less than 20 minutes!
Ingredients
- 1/2 lb. salmon filet
- 2 Tbsp. olive oil, divided
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 Tbsp. honey
- 1 Tbsp. Dijon mustard
- 1 1/2 cups rice, uncooked
- 2 Tbsp. lime juice
- 1/4 cup fresh chopped cilantro
- 1 bell pepper, diced
- 2 carrots, diced
Instructions
- Preheat oven to 450º.
- Cook rice in a pot with lime juice and cilantro according to package directions. Arrange filets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon olive oil and season with salt and pepper. In a small bowl, whisk together remaining olive oil, honey and mustard. Drizzle mixture over salmon. Bake for about 12 to 15 minutes.
- Shred cooked salmon and mix with the bell pepper and carrots. Serve over cooked lime rice and top with cilantro.
