Salmon and Lime Rice

Salmon and Lime Rice

Need a quick dinner for tonight? Salmon and Lime Rice will be done in less than 20 minutes!

Ingredients

  • 1/2 lb. salmon filet
  • 2 Tbsp. olive oil, divided
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • 1 1/2 cups rice, uncooked
  • 2 Tbsp. lime juice
  • 1/4 cup fresh chopped cilantro
  • 1 bell pepper, diced
  • 2 carrots, diced

Instructions

  1. Preheat oven to 450º.
  2. Cook rice in a pot with lime juice and cilantro according to package directions. Arrange filets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon olive oil and season with salt and pepper. In a small bowl, whisk together remaining olive oil, honey and mustard. Drizzle mixture over salmon. Bake for about 12 to 15 minutes.
  3. Shred cooked salmon and mix with the bell pepper and carrots. Serve over cooked lime rice and top with cilantro.
