Blueberry Breakfast Bake

We have plenty of great recipes for you to try this Easter season! For an Easter morning brunch dish, make Blueberry Breakfast Bake– complete with fresh flavors and a crumble topping.

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 stick butter, softened
  • 1 egg, lightly beaten
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1 tsp. lemon zest
  • 1/4 tsp. salt
  • 2 cups blueberries, fresh or frozen
  • Crumble Topping
  • 1/3 cup sugar
  • 1/2 cup flour
  • 1/2 cup chopped walnuts
  • 1/2 tsp. cinnamon
  • 3 Tbsp. cold butter, cubed
  • Drizzle
  • 1/2 cup powdered sugar
  • 2 Tbsp. milk

Instructions

  1. Preheat oven to 350°.
  2. In a large bowl, whisk together flour, sugar and baking powder. Add butter, egg, milk, vanilla, lemon zest and salt. Stir until just combined. Fold in blueberries. Transfer batter to a 9-inch square baking pan sprayed with non-stick cooking spray.
  3. In a medium bowl, combine sugar, flour, walnuts and cinnamon. Add butter gradually until mixture is crumbly. Sprinkle over batter. Bake for 40 to 45 minutes.
  4. In a small bowl, whisk together powdered sugar and milk until smooth. Remove breakfast bake from oven, drizzle with glaze and serve.
