Mexican Street Corn
Take advantage of summer’s sweet corn and make Mexican Street Corn- complete with feta crumbles.
Ingredients
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup minced cilantro
- 2 cloves minced garlic
- 1/4 tsp. salt
- 1/4 tsp. ground chipotle pepper
- 2 tsp. lime zest
- 2 Tbsp. lime juice
- 6 to 8 ears of corn
- 1/2 cup crumbled Cotija or Feta cheese
Instructions
- Preheat grill to 400°.
- In a bowl, whisk sour cream, mayonnaise, cilantro, garlic, salt, chipotle pepper, lime zest and lime juice.
- Grill corn for about 3 minutes on each side. Remove from grill once charred.
- Brush sour cream mixture on each ear of corn. Roll corn in cheese and sprinkle with additional chipotle pepper, if desired.
