Mexican Street Corn

Take advantage of summer’s sweet corn and make Mexican Street Corn- complete with feta crumbles.

Ingredients

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup minced cilantro
  • 2 cloves minced garlic
  • 1/4 tsp. salt
  • 1/4 tsp. ground chipotle pepper
  • 2 tsp. lime zest
  • 2 Tbsp. lime juice
  • 6 to 8 ears of corn
  • 1/2 cup crumbled Cotija or Feta cheese

Instructions

  1. Preheat grill to 400°.
  2. In a bowl, whisk sour cream, mayonnaise, cilantro, garlic, salt, chipotle pepper, lime zest and lime juice.
  3. Grill corn for about 3 minutes on each side. Remove from grill once charred.
  4. Brush sour cream mixture on each ear of corn. Roll corn in cheese and sprinkle with additional chipotle pepper, if desired.
