Southern Macaroni Salad
For a simple side dish, make Southern Macaroni Salad– complete with the perfect balance of sweet and spicy ingredients.
Ingredients
- 1 lb. macaroni
- 1 1/2 cups mayonnaise
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. sugar
- 1 Tbsp. hot sauce
- 1 clove garlic, minced
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 (12 oz.) jar roasted red peppers, drained and chopped
- 1 cup finely chopped kale
- 6 slices bacon, cooked and crumbled
- 1/2 cup sweet pickle relish
- 1/2 cup chopped green onions
Instructions
- In a large pot, cook macaroni according to package instructions. Drain, rinse with cold water and transfer to a large bowl.
- In a medium bowl, combine mayonnaise, apple cider vinegar, sugar, hot sauce, garlic, garlic powder, salt and pepper. Pour dressing over macaroni.
- Add roasted red peppers, kale, bacon, relish and green onions. Toss well to coat. Refrigerate until ready to serve.
