Italian Sausage, Chicken & Potato Skewers
This school year, keep the grill out a little longer and make Italian Sausage, Chicken & Potato Skewers. This recipe is full of flavor and takes little to no time to prepare.
Ingredients
- 1 1/2 lbs. baby potatoes
- 1 cup Italian dressing
- 2 Tbsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. onion powder
- 1/2 tsp. Italian seasoning
- 1/2 tsp. freshly ground black pepper
- 1 1/2 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, cut into 1-inch pieces
- 1 lb. Italian sausage or kielbasa, cut into 1-inch slices
Instructions
- In a large pot, parboil potatoes for about 10 minutes. Drain and set aside.
- In a large bowl, whisk together Italian dressing, mustard, salt, onion powder, garlic powder, Italian seasoning and pepper. Add chicken and toss to coat. Cover and refrigerate at least 30 minutes.
- Preheat grill to 350°.
- Place marinated chicken, potatoes, onion and sausage alternately on skewers. Grill about 15 minutes, turning every 5 minutes. Serve.
