Bell Pepper Turkey Boats
Bell Pepper Beef Boats can be customized with your favorite taco toppings. Serve this meal as an appetizer or light dinner.
Ingredients
- 1 lb. ground beef or turkey
- 1 onion, chopped
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. cayenne pepper
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. salt
- 3/4 cup salsa
- 1 cup shredded Cheddar cheese
- 3 bell peppers, seeds removed and sliced into wide slices
- Avocado, green onions and plain Greek yogurt for serving
Instructions
- Preheat oven to 375º.
- Cook meat and onion over medium-high heat, until no longer pink and cooked through. Drain fat. Add chili powder, cumin, garlic powder, onion powder, cayenne, pepper, salt and salsa to meat; stir to combine. Evenly distribute mixture into bell pepper slices and top with cheese.
- Bake on a parchment-lined baking sheet for 10 minutes or until cheese is melted and peppers are hot. Remove from oven and top with avocado, green onions, and yogurt.
